This will be a short blog. I haven’t written one in awhile. The newest news is that I adopted a 9 year old Maltese named “Sir Frederick Of Jonesboro” Lily is happy Fred is here.
It seems that all the vegetables seem to be ready at once. For me cucumbers, green beans, and a few tomatoes. Today I am working on the the beans I picked yesterday.
I decided to freeze them since it is quick and easy for the little amount of beans I have. I already picked a couple other batches. There may be one more round yet.
First I had to stem the beans meaning cutting each end off. I know years ago this was a way of socializing with other women and they would have canning bees. They all would just sit around the table catching up on news while the were de stemming them. Many times this and church were their only means of socializing. Well quilts and crocheting too.
Today I already took the stems off and washed them. In one of the pictures you see will see it. I had a pan full of water bringing to a boil and then put them in there waiting for it to be brought to a boil again and let boil for 3 minutes. That’s called blanching.

Then I had to drain the boiling water into my shiny sink. I had ice water in the other shiny sink bowl just waiting to be of service!

Next was the bagging. I would love to have a vacuum seal system but for now it is Hefty One Zip Freezer bags. I didn’t fill them full because it is just me. I also doubt they will be in the freezer long because I will be eating them!

Next is putting them in the freezer. I took the stem parts and put in my compost bin.

So why am I making such a big deal about this process? Because the green beans really “isn’t” what the blog is about.
